The best stuffed peppers!

I have been cooking this for Adam since we were dating and we never get sick of it!

I have tweaked the recipe throughout the years and I have finely perfected it to our liking! :) enjoy


Stuffed Bell Peppers


Ingredients:

  • 4-5 Bell peppers any color of your choice (green, yellow, orange or red). I try to use the largest sizes possible.

  • 1 pound ground beef

  • 1 pound ground Italian sausage (I’m I use spicy but that’s optional if you don’t like hot)

  • 1 cup Instant Rice or 4 servings cooked

  • 1 large sweet onion diced

  • 2 large jars marinara sauce

  • 1/4 cup Italian bread crumbs

  • 1 egg

  • 1 cup shredded mozzarella cheese

Instructions:

Preheat oven to 350 degrees Fahrenheit.

Cut tops off of peppers removing seeds and the soft membrane inside and discard. Place in a pot of boiling water for 3-5 minutes until the pepper becomes soft.


Combine in a large bowl the ground beef, sausage, salt, pepper, breadcrumbs, diced onion, egg, cooked rice and stir until well incorporated.


Stuff beef mixture into the bell peppers.


In a 3 inch tall baking pan place a thin layer of marinara sauce on the bottom of the pan. Place peppers on top of sauce.


Pour remaining marinara sauce over peppers. Cover baking dish with a lid or foil and bake for 40 minutes.


Remove from oven and place mozzarella  cheese on top.

Place in the oven and cook an additional 10 minutes
