Ingredients
1 tablespoon extra virgin olive oil
1 onion chopped
3 cloves garlic large, minced
1 jalapeño diced and seeded (optional)
2 teaspoons ground cumin
1 packet taco seasoning
14 oz fire roasted tomatoes
1 can rotel
4 cups chicken broth
14 ½ oz black beans rinced and drained
1 cup frozen corn
3 chicken breasts
Toppings
Sour cream
Cheese
Cilantro
Tortilla strips
Instructions:
In a crock pot combine the chicken breast, taco seasoning, and chicken broth and cook on high for 3 hours.
After chicken is cooked, take two forks and shred the chicken.
Add the remaining ingredients and cook on high for 2 hours.
Top with sour cream, cheese, and tortilla strips in your bowl.
