You guys this recipe is seriously so good. Fall time is my favorite because it means I can eat soup all week long if I want to and no one can judge me. Fall =Soup Season for me.
Before you start cooking this recipe I highly recommend reading the instructions first. It goes fast.
I LOVE spicy things so I always add spicy Italian sausage and pepper flakes. However, if you want a mild soup just swap it out for sweet Italian sausage.
Creamy Tomato, and Spicy Sausage Tortellini Soup
Ingredients:
1lb Ground Spicy Italians Sausage
1 Cup Carrots Finely Diced
1 Medium Onion Finely Dices
2 Stalks celery finely diced
3 Cloves Garlic Minced
1 TBLS Extra Virgin Olive Oil
1 TBLS Italian Spices
1/8 tsp Red Pepper Flakes
1/4 Cup Flour
1/2 cup milk
6 Cups Chicken Broth
19 oz PKG Cheese Tortellini
6 oz Tomato Paste
1 Cup Heavy Whipping Cream
3 Cups Kale, Finely Chopped
Salt And Pepper to Taste
Parmesan Cheese for garnish
Directions:
Finely dice your carrots, onion, and celery. Mince you garlic and add it to a pan with 1 TBLS extra virgin olive oil. Sauté everything until theonions become translucent and you get a little color on the veggies.
Remove veggies from pan and set into a bowl. In the same pan cook 1 pound ground spicy Italian sausage. Remove this from the pan and set aside.
Combine 6 cups chicken broth, 6 oz tomato paste, Italian herbs, salt and pepper, and pepper flakes and bring to a boil. Add in the veggies and let cook on med/high heat for 10 minutes. Make sure you mix the soup every 5 minutes.
Add in the Cheese Tortellini and Sausage and let cook for 3 minutes before the next step.
In a bowl mix together 1/4 cup flour and 1/2 cup milk until it becomes a thick paste.
Mix soup
Turn heat to medium/ low and add in 1 cup heavy whipping cream as well as the flour and milk mixture until the soup becomes the consistency you want.
Finely chop your kale and add into soup and give it a good mix.
Cook for an addition 5 minutes or until Kale becomes wilted.
Serve with grated parmesan cheese on top and a slice of your favorite bread.
