Mallory's Spicy Chicken Tacos Recipe

Look at this feast! We definitely ate way to much last night for Cinco de Mayo! Before I dive into the recipe there are few things I have to say about it.

  1. If you don't like spicy food, this is not for you.

  2. If you don't grill the chicken outside, good luck. Your house will be SPICY! What I mean by that is your eyes are gonna water, you'll be coughing non stop, and your nose will be burning. #Worthit

  3. These are just so good.

When I first made these tacos I couldn't believe how easy and flavorful they were! These have been a go to staple in our house for a few years now. If you don't like chicken, you can use steak as well. I normally use a NY Strip or Sirloin. Both taste incredible, and we often do both. If you use steak instead, you will have a much faster cook time depending on how you prefer to eat it.

Mallory's Spicy Chicken


Ingredients:

1. Five Chicken Breast

2. 2 Cans of Chipotle Peppers in Adobe Sauce (I buy mine at Aldi)

3. 1/8 Cup Olive Oil

4. 1 tsp. Salt

Directions:


In a bowl or zip lock bag add all the ingredient together. Break up the chipotle peppers with a utensil or if you use a bag just squeeze them. If you get this sauce on your skin it will burn, so please be careful.


Let the chicken marinate for 30 minutes. If you don't like your food super spicy I recommend doing 10-15 minutes.


After the chicken has finished marinating, place on the grill and cook until the temp reaches a perfect 165 degrees. (This will take around 30 minutes). I start the grill with high heat to get a sear on both sides for around 2 minutes then turn it too low heat. After you get your sear on both sides I take the remaining chipotle peppers and place them on top of the chicken while it is cooking. This helps keep the flavor locked in.

After the chicken is done I toss the peppers in the trash and place the chicken on a cutting board to rest for 5-10 minutes.



Mallory's Spicy Chicken Taco's Recipe:


Ingredients:

  1. Small Soft Tortilla Shells (We Use Flour Tortillas)

  2. Lettuce

  3. Cheese

  4. Sour Cream

  5. Cilantro

  6. Onions

  7. Peppers of your choice

  8. Tomatoes

  9. Guacamole

  10. Salsa

  11. One Can of Black Beans

  12. 1 tsp. Olive Oil

  13. Salt

Directions:

When I cook my tortillas, I do it right over an open flame. If you choose to do this, please be careful as you can get burned very easily.

Place a soft tortilla over a gas burner on low heat and flip every 5 seconds with tongs until desired color is reached.


Next I slice up all of the amazing toppings we love!


For the black beans, I rinse them, pat them dry with a paper towel, then I toss them in olive oil and a little salt. Place them on a baking sheet to broil on high for 7 minutes. After they are finished cooking place them in a bowl to cool down.


For the Onions, peel them and slice them in half. Place them on the grill to cook along side the chicken for around 20-30 minutes.


For the peppers of your choice, place them on the grill to cook along side the chicken for around 20-30 minutes.



After everything is done its time to assemble your tacos! I recommend putting a small this layer of sour cream or guac on the shell first so the rest of your toppings stick inside the tortilla.
