Homemade Elderberry Syrup

I have been making my own elderberry syrup for the past three years and this recipes never fails me!
Homemade Elderberry Syrup
Ingredients:
3 1/2 Cups of Water
1 1/3 Cups of Frozen or Fresh Elderberries
1 tsp Cinnamon or Two Cinnamon Sticks
1/2 tsp Ground Clove
2 tbls Fresh or Frozen Ginger
1 whole Clove of Garlic
1 tsp Fresh Lemon Juice
1 tsp Lemon Zest
1tsp Fresh Basil
4 to 8 oz of Fresh Local Raw Honey or Manuka Honey (Depends how sweet you want it)
Directions:
Combine all the ingredients except for the honey in a pot and heat to a boil. After the ingredients start to boil, simmer for 40 minutes. Remove the cinnamon sticks and garlic clove. Use a potato masher and squish the berries. Pour into a cheese cloth or fine strainer into a glass dish. Use the potato masher to squeeze the remaining syrup out of the cheese cloth. Add the honey into the hot syrup and whisk it until its dissolves. Pour into a mason jar or glass bottle and store in the fridge. I normally label mine with the day I made it. I will take one tbls of this daily and when I'm sick, I will take 3 tbls daily. This recipe makes a little over a cup of fresh elderberry syrup.
